This skillfully crafted cognac is a blend of several crus with a perfect balance between Fins Bois, Grande and Petite Champagnes at the peak of their aromatic potential.
Peach: When the cognac is distilled and aged, it begins to conjure the soft, luscious aroma of ripe peach.
Toasted almonds: After several years in our French fine-grained oak barrels, the spirit develops nutty notes and ages to produce a sweet, caramelized flavor resembling that of toasted almonds.
Jasmine: The distillation on the lees is a complex and meticulous process but it gives fruity and musk notes, evoking jasmine aroma.

The character of each individual note is shaped by its terroir, grape, cask and years of maturation.
Ginger cookies: The vines produce round and smooth eaux de vie which, after distillation on the lees, develop complex aromas with rich spicy notes.
Roasted coffee: When the coopers toast our oak casks, the charred surface not only helps the eaux-de-vie soak into the wood better, but also gives the spirit a sweet roasted flavour.
Dried plums: Deep, fruity flavours are produced in the second stage of ageing as eaux-de-vie from different crus start to fully mature with the lees retained from our meticulous distillation method.

This cognac contains eaux-de-vie primarily selected from the Borderies cru, which at 12 years old develop their best floral and spicy notes. These tasting are further enhanced by the combination of Fins Bois grapes to develop the vibrancy of Blend and Grande Champagnes eaux-de-vie that give underlying elegance and dept.
On the nose, notes of violets, orange blossoms quickly meld into spicy tasting of clove, ginger and star anise. Delicate vanilla completes the aromatic harmony.
On the palate, a luxury of almonds, raisins and orange marmalade are nurtured from the Grande Champagne eaux-de-vie.

This cognac contains the finest eaux-de-vie from the Grande Champagne cru, that have been aged for over two decades in hand selected Tronçais oak barrels. 21 years is the perfect time for these specific eaux-de-vie to develop their full richness and heightened aromatic style.
On the nose, the first notes are dried hazelnut, dried apricots and figs, followed slowly by notes of cocoa, honey and smooth spices like white pepper and coriander. The finish brings subtle notes of leather and fine cigar.
On the palate, the aromatic notes deepen into candied orange and gingerbread, leading to a smooth and voluptuous finish with exquisite depth that seems to go on forever.

Old Port Wine: During the long ageing process, the volume of cognac gradually reduces, making it more concentrated. This gives it the ‘rancio’ aroma – earthy and mushroomy.

Courvoisier®takes great care of the quality delivered at each stage of the making process. We are working very closely with our partners, offering technical support and guidance with regards of both wine making and distillation process. Nurturing close relationships with over 800 vine growers ensures the grapes used are the finest in the Cognac region.
Crafted from 200-year-old oak trees individually selected by the Master Blender, our barrels are handmade to exact specifications by a team of skilled coopers, ensuring that they are worthy of these exquisite grapes.
Growing
The crus

Cognac can only be produced from Colombard, Folle Blanche or Ugni Blanc grapes and there are six legally recognised “crus” or areas in the Cognac region where these grapes may be grown—each selected for its perfect combination of clay, chalk, lime and flint stones, rainfall and glorious sunshine. Courvoisier® mainly works, though, with the four finest crus: Grande Champagne, Petite Champagne, Borderies and Fins Bois.
The grapes are harvested at their peak, at the end of the summer. Once pressed by the vine growers, the juices are allowed to naturally ferment over seven days, transforming the grape sugars into wine.
Distilling
Traditional process

This wine is double distilled in an intense process unique to cognac. Distillation takes place 24 hours a day from November to March only. To ensure the finest quality, Courvoisier recommends the use of traditional 25 hectoliters alambics from the first stage of distillation.
Courvoisier® is one of the few cognac houses to distill "on the lees," a specific technique which requires keeping the yeast residue.
The final product is separated into three parts: the head, the heart and the tails. Only the clear and pure liquid from the heart is used to craft Courvoisier®. This distilled spirit or "eau-de-vie" is ready for ageing.
Ageing
Handcrafted barrels

In our cellars, the precious eaux-de-vie are aged in barrels handcrafted with oak trees directly selected by Courvoisier in specific forests. They provide us with qualities of wood necessary to achieve our Courvoisier house style.
Once the oak staves are cut, the wood is dried naturally for three years by the master coopers. Once the barrels are completed, they are filled with the eaux-de-vie and the ageing process begins.
All cognac must be aged for a minimum of two and a half years, growing increasingly more complex and smooth the older it gets.
Blending
Fusion & Harmony

At the heart of the blending philosophy is a respect for the unique nature and individual qualities of every aged cognac.
A little like conducting a symphonic orchestra, fusing these fine spirits into a consistent and harmonious blend is a precise art and the result of an undoubted passion and dedication overseen by only six master blenders over the 200-year brand history.
